Arugula, Radicchio and Fennel Salad with a Clementine Dressing
I hope you had a happy and merry Christmas, and you enjoyed your food and company. But when it comes to nutritional advice, mine is always the same: have a salad on Christmas dinner!
Salads, like this one made with rocket and radicchio, really support your natural liver detoxification pathways. Your body needs this support after all the fatty and sugary Christmas food.
Fennel, on the other hand, is really gentle on your gut and great for reducing bloating.
Arugula and bitters support your liver detoxification
Arugula, or rocket as it’s called in the UK, is one of the most nutrient-dense leafy vegetables, and like many other Cruciferous vegetables, is rich in sulforaphane a compound that supports liver detoxification pathways and the production of glutathione a powerful antioxidant.
Bitter vegetables like radicchio or endive support liver function and bile flow which important to digest fats, absorb nutrients and microbiome health.
What you need for this Christmas detox salad
For the salad
- Rocket/Arugula
- Red Radicchio
- Fennel
- Clementine
For the dressing
- Good quality Extra-Virgin Olive OIl
- Wholegrain mustard
- Lemon
As you can see, the ingredients are simple and easy to find. Healthy food does not need to be complicated.
Eat it on its own or with some leftover meat or fish roast
This salad is very versatile. You can have it as a starter, or an accompaniment of meat, especially white meat like chicken, or fish.
Eating a salad as a starter helps reduce sugar spikes after a meal.
Too much sugar, especially fructose, can fatigue the liver. Eating a salad before your main meal helps reduce sugar absorption and sugar spikes.
