
Perfect for the Autumn this chicken, falafel and pomegranate salad is quick, tasty, and nutrient-dense. Ideally for a quick but nutritionally balanced lunch or dinner. I have named it ” My Waitrose Chicken Salad” because I used to make it with Waitrose’s rotisserie chicken sweet potato falafel, but you can use pan-roasted chicken fillet too.
I normally vouch for home-cooked food, but sometimes time is really short and you have to compromise. These sweet potato falafel add great flavor and can liven up a simple salad.


This chicken salad is ready in 10 min
Preparation time for this salad depends on whether you use leftover cooked chicken or not. If you are cooking the chicken I can suggest this simple recipe for pan-fried lemon chicken and thyme, so easy to make and does not require many ingredients.
Lemon is one of those must-have healthy ingredients that should always be around, while thyme grows really well in UK and can be kept in a pot in your kitchen.

How to make this Chicken Salad with falafel and pomegranate

My Waitrose Chicken Salad
Ingredients
- 3 Chicken fillets or some Waitrose rotisserie chicken
- 2 handful Green salads leaves
- few cucumber slices
- 2 Waitrose sweet potatoes falafel
- 2 tsp EVOO
- a Few Pomegranate seeds
- a few Pumpkin seeds
- a few Red Radicchio leaves
- a dash Lemon juice
- a dash Balsamic glaze organic
Instructions
- Simply place all the salad ingredients on a serving plate or bowl, add the chicken ans season with a drizzle of extra-virgin olive oil, a dash of Balsamic and lemon juice. Serve with a slice of sourdough bread.
