This celeriac and apple soup is super simple and a great variation to the classic British turnip and apple soup. Celeriac has less calories and carbs than turnips and potatoes, but it is very filling and satisfying.

Low in calories
Low in calories but filling and rich in nutrients and comforting, this soup is great for a lighter meal or starter after you have indulged a bit and for the New Year.
Celeriac is a probiotic
Celeriac is also a pro-biotic meaning that it feeds the gut bacteria in your gut. For this reason though, if you suffer from meteorism or IBS, you should start with a small quantity.
This soup is very easy to make
This two-ingredient soup is very easy to make and budget-friendly. It is a great soup as light a lunch or dinner and can be prepared in advance or frozen. It is a great help if you are looking to lose a few pounds.

Celeriac and apple soup
Equipment
- 1 Blender
Ingredients
- 1 Celeriac
- 1 Apple
- 1 vegetable stock cube Organic if possible
Instructions
- Simply peel both the celeriac and the apple. Cut in chunks and place them in a pot covered by some vegetable broth that you have prepared crumbling the stock cube in a jug filled with hot water form the kettle ( You can also use chicken broth if you like or if you some ready)
- Bring it to boil then let it simmer for 25 min. Blend it and serve, with touch of butter or a drizzle of olive oil.
Notes
- A drizzle of cold-pressed extra-virgin olive oil
- A little of goat butter ( goat dairy is better tolerated that cow’s dairy )
- A little of grass-fed, organic butter
- A few shavings of Parmesan cheese
